Waykan
Waykan
Hazelnut and cacao nibs up front, gentle roast sweetness and a delicate fruitiness behind — this Guatemala is the boldest of our filter roasts and stays remarkably clean all the same.
The beans come from Huehuetenango in western Guatemala, one of Central America's best known growing regions. At 1,400 to 2,200 metres the plants grow on volcanic soil; dry, cool winds from the Mexican lowlands protect them from frost and create a microclimate that produces particularly layered profiles.
„Waykan“ means „star that shines in the night sky“ in the region's Maya Q’anjob’al language. The lot is assembled from the harvests of many smallholder farmers — every coffee is cupped and scored individually, and only lots with the characteristic clean Huehuetenango profile make the selection.
