Jorge Rojas grows his coffee at Finca La Roca in Planadas, Tolima, at around 1,800 metres above sea level. The varieties — Caturra, Castillo, Variedad de Colombia and Catimor — undergo a 120-hour anaerobic natural fermentation. The result: a dense, fruit-forward cup with pronounced sweetness, red berries, dark fruit and a subtly wine-like finish.

Jorge is a member of the ASOPEP cooperative, an association of small-scale ecological producers in Planadas committed to sustainable farming and transparent practices. His coffees have received multiple awards, including a top placement at the Cup of Excellence Colombia.
