Peach cake and mango sorbet — a filter blend closer to a dessert than to a classic filter coffee. Two experimentally processed lots, one small batch, made once.
The larger share comes from the Gitoki washing station in Gatsibo district, in Rwanda's Eastern Province. Around 515 smallholder farmers deliver their cherries there; the variety is Red Bourbon, grown between 1,500 and 1,900 metres and processed as an experimental natural. The smaller share is a Colombian lot from smallholder farmers whose ripe cherries go through a double anaerobic fermentation and are then slowly sun-dried.
Roasted light, for filter. The experimental processing brings plenty of sweetness and fruit of its own — a light roast keeps both in place instead of covering them.
